Emerald Cocktail

8 Jan

Oh how healthy, yummy, and refreshing this little cocktail looks! I recently stumbled upon Panamanian chefs Melissa De Leon’s blog and found this great recipe for what she calls the “Emerald Cocktail”. It’s made with fresh avocados, honey, milk, and ice cream. This can EASILY be “veganized” by substituting the whole milk and ice cream with soy/almond milk and soy based ice cream, and if you prefer not to use honey, I would highly suggest Agave Nectar. I love this’s sweet like sugar, yet totally natural!

Avocado Cocktail:

1 avocado, ripe

2 tablespoons honey

4 oz. whole milk

4 tablespoons vanilla ice cream

a pinch of cinnamon (optional)

Directions: Remove skin and seeds from avocados, chop roughly. Blend the avocados, honey, milk and ice cream in a blender for 15 seconds or until becomes smooth. Serve in tall glasses with ice and dust cinnamon on top.

Joyful Almond Cocktail

10 Nov

Joyful Almond – created by Cheri Loughlin

1/2 ounce Amaretto Syrup

3/4 ounce Cream of Coconut

1 ounce Half & Half

1/2 ounce Hershey’s Chocolate Syrup

** At this point i would add a little vodka for my full effect**

Combine amaretto syrup, cream of coconut and half & half in a cocktail shaker with ice. Shake vigorously to thoroughly mix.  Strain into rocks glass over fresh ice.  Drizzle chocolate syrup over the top.

Notation:  Bring the Joyful Almond to the next level by placing the first three ingredients in a blender with two scoops of vanilla ice cream.  Blend.  Pour into decorative glass.  Drizzle chocolate over the top.  Enjoy a frozen Joyful Almond treat.
